- 2 sticks of unsalted butter
- 5 pounds of well scrubbed russet potatoes or Yukon gold
- 2 table spoons of kosher salt, divided into finely chopped chives.
- A freshly grounded black pepper
- Additional butter or pat (optional)

Boil your potatoes-keep your potatoes in a big pot and add 2 glasses of water. Ensure that the water covers the potatoes by 2 inches. Add 2 tablespoons of the salt and leave the mixture to cook for around 30 minutes. Ensure that the heat is medium. Uncover them and reduce the heat so as to maintain smooth simmer. You can test the doneness after the 30 minutes. If you are using small potatoes, they will be cooked already, but if you are using large potatoes, you may require additional 20 minutes.
Heat the butter and add salt
Once your potatoes have cooked, melt your butter using the pan. This can take only two to three minutes in medium heat. Add a table spoon of salt and taste it to ensure you have added the right amount.
Drain your potatoes
Since the potatoes are ready, you can drain them. Use a colander or sufuria. At this stage you not require excess heat, infarct, you can almost turn it off. Cover it and leave it for around 5 minutes.
