  • 2 sticks of unsalted butter
  • 5 pounds of well scrubbed russet potatoes or Yukon gold

Boil your potatoes-keep your potatoes in a big pot and add 2 glasses of water. Ensure that the water covers the potatoes by 2 inches. Add 2 tablespoons of the salt and leave the mixture to cook for around 30 minutes. Ensure that the heat is medium. Uncover them and reduce the heat so as to maintain smooth simmer. You can test the doneness after the 30 minutes. If you are using small potatoes, they will be cooked already, but if you are using large potatoes, you may require additional 20 minutes.

Heat the butter and add salt

Once your potatoes have cooked, melt your butter using the pan. This can take only two to three minutes in medium heat. Add a table spoon of salt and taste it to ensure you have added the right amount.

Drain your potatoes

Since the potatoes are ready, you can drain them. Use a colander or sufuria. At this stage you not require excess heat, infarct, you can almost turn it off. Cover it and leave it for around 5 minutes.

Mash the potatoes

If you are using a ricer or a potato masher, peel your potatoes. You can pick one by one using the pot holder and then peel the outer layer off using the paring knife. Taste, garnish and then serve

Your mashed potatoes are now ready. Taste them to conform that your ingredients are well balanced. Add more salt if need be but don’t over do it. This is the best time to add pepper or other spices of your choice that do not necessary require cooking. Spoon the serving dish with optional garnishes like chopped chives and a pat of butter.
