- Half small size finely chopped white cabbage (about 4 cups)

Mix a quarter cup of apple cider vinegar, 1 tablespoon sugar and hot pepper in a microwaveable bowl. Heat the oven to 220 degrees. Add the onions to the bowl containing the mixture. Cover the bowl with stretch film and place in a microwave for 3-5 minutes until the onions start to become crispy.
Remove the film from the microwave bowl and allow the onions to cool. Meanwhile, mix a cup of mayonnaise coriander, 1 tablespoon sugar and 2 tablespoons vinegar in a large bowl and mix into the cabbage add chopped red pepper, 1 teaspoon of salt and pepper and mix.
